This week's recipe:"Whole-Wheat Cheesy Chicken Calzone"
Ingredients:-All of the TJ's top 5 items listed above.
-cooked chicken breasts, cut into pieces. (I'm using chicken breast that I stocked up on when it was on sale. I cut it up into small strips/pieces, add a little salt and pepper, then cook the pieces in a skillet with a little bit of extra-virgin olive oil until lightly browned and cooked all the way through).
Instructions:-Take whole-wheat pizza dough out of the fridge. Take the dough out of the bag and let it rest on a floured surface for around 20 minutes. Then proceed to follow package instructions for kneading/rolling...etc.
-Mince a few cloves of garlic. (I love garlic so I probably use more than you may like, so you can adjust the amount of cloves you use based on your tastes.)
-Cook chicken. I'm using chicken breast that I stocked up on when it was on sale. I cut it up into small strips/pieces, add a little salt and pepper, then cook the pieces in a skillet with a little bit of extra-virgin olive oil until lightly browned and cooked all the way through. Towards the end, when the chicken is almost done, I add the minced garlic to the skillet and cook until it is lightly browned.
-Once the dough is ready, separate and roll into circles. Don't worry, they don't have to be perfect circles. :) The amount and size of the dough circles depends on how many calzones you want to make and also how big you want each calozne to be. It's totally up to you!
-Now it's time for layering ingredients onto the dough. **Be sure to add the ingredients to
half of the circle, so the other half can be folded over the top to form the calzone. This is how I would layer it; some pizza sauce, ricotta cheese, chicken, then mozzarella on top of the chicken. There really is no science to how to layer your pizza/calzone, it's a very simple and versatile recipe.
-Once you have layered your dough with ingredients, fold the other half of the dough over the layered side. Then you can either pinch or use a fork to seal off your calzone, and it should now look like a half-circle.
-Cook according to the pizza dough package directions, and that's it! :)
This is my own little creation, so feel free to change it up and add whatever you want to the recipe. You can even just make it into a pizza if you find that easier than the calzone. This would be something fun to make with the whole family. My husband and I love cooking together, and can't wait to have our son join us in the kitchen...when he gets a little older of course. ;)
